Happy Thursday! I don’t know about you but this week is totally flying by for me. I kinda dig it! I am looking fwd to some St. Patty’s Day fun this wknd with friends.
Hopefully a little debauchery will be involved like last year…
Yeah…really it’s just another excuse to wear my pro compression shamrock socks. They are too much fun.
On another random note I thought I would share a breakfast with you that I have been loving lately. If you know anything about TX you know we love TACOS!
Basically.
…and I love me some breakfast tacos. So I decided to put matters into my own hands and create my own version. Straight from the Chelsea Café.
Here’s what you need-
-My favorite carb balance tortillas. 2 of them to be exact.
-2 eggs and 1 egg white, beaten
-2 pieces of bacon/turkey bacon (depends on what you like…I really have been loving real bacon lately, in moderation!)
-1 wedge of laughing cow light swiss cheese
-Salt/red pepper flakes, to taste.
Scramble the eggs and throw in the laughing cow cheese til fully cooked. Cook bacon. Place eggs on tortillas and crumble up bacon on top. Sprinkle red pepper flakes on top for a little zest. Fold then gobble those bad boys up.
You know you want some.
What are some restaurant favorites you like to recreate at home? Are you doing anything for St. Patty’s Day this wknd?
Anyone running a marathon to celebrate? I know this girl is…so go wish her GOOD LUCK!
Mmm, these look like the perfect breakfast! I would love if you would come over and share this or another recipe at my link party going on right now! http://domesticsuperhero.com/2013/03/14/sharing-with-domestic-superhero-thursday-link-party-2/ Hope to see you!
Thanks! I posted a link!
Thanks for coming by my Thursday Link up Party to share this! Hope to see you again this week!
that sounds delicious! I love me some eggs and bacon
Girl yes! Much needed treat sometimes…good protein! 🙂
YUM! I’m pacing the RnR USA Marathon in DC on Saturday, and planning on post-race Mexican and margaritas 🙂 Sunday will be green beer day!
FUN! I love me some DC- enjoy it!! U should come pace the Inaugural Irving Marathon April 27th! I bet they still need pacers…I am pacing the 2 hr half 🙂
Yum! My go-to breakfast recreated from a restaurant is an egg mcmuffin. I bake eggs in a muffin top baking pan for 15 min at 350 (this makes them that perfect round size to fit on the muffin!) and prepare my own turkey sausage patties (made similar to a hamburger patty) beforehand. Toast an english muffin, top with an egg, a patty, and a slice of cheese= delish and easy! 🙂
I’m running the Leprechaun Chase 10k Saturday morning- it’s supposed to be an “all out” run according to my coach to see where I’m at… and I’m nervous! I just bought some Irish knee high’s and a kelly green technical shirt for the race!
Oh the 10k sounds so fun! U will crush it…I’m sure!! Can’t wait to hear all about it!
The breakfast sounds so yum, I will try that out!!
Tacos are probably one of my top three favorite foods. DELICIOUS!
Also, I cannot wait to wear my shamrock socks this weekend!
Woohoo! Enjoy rocking the shamrocks!!
I want those socks!! I have nothing to do with Irish or know anyone being Irish, but the socks look so much fun!!
haha I am not Irish either but I may pretend to be this wknd! 😉
Cool!! Maybe I should too? My bf will think I’m crazy, but who cares? Fun is fun! 😀
That’s right! DO IT!!
Best socks ever! I’m doing a 10k on Sat morning and then we will be hitting up some parties and bars the rest of the day 🙂
woo-hoo! Enjoy!
I’m gonna make me some of those tacos right now. Thanks for idea.
You’re welcome! They’re so filling…hits the spot!
I love breakfast burritos, these seem similar. I love turkey bacon or regular bacon, any bacon is good haha
Right?! I am glad we agree on the bacon!
You could even chop up some green pepper, or add basil…
Yum! I love basil esp when it’s fresh!
Yum! I’d like to try and make fajitas at home next. I think I need to try TexMex food. I think I would love it!
Tex mex is the best and so easy to make!
Oh yum. I love breakfasts like this, especially smothered in salsa. We have chickens and always have fresh eggs, so I’m extra spoiled 🙂
Man! Fresh eggs must be amazing…I’m not even sure I know how those taste, haha! I love the cage free eggs at the store.
Those breakfast burritos sound delish! I’ve been craving breakfast burritos lately, but just haven’t had the energy to make them.
These are so easy to make…try them out!
Looks delish!! Love catching up on your blog!
Love when you come visit! I very much enjoy your blog as well 🙂
First, thank you for the S/O. I appreciate it!!!
Second, I had to steal that ecard. Mexican food is big in my house.
Third, I am loving your compression socks. So festive for St. Paddy’s Day.
I know, I’m just catching up. It’s been such a chaotic week for me last week.
