Last night’s dinner…buffalo chicken wraps. It’s basically like the dip except wrapped up in iceberg lettuce. I will definitely be making these more often since it’s a great lazy girl meal.
I mixed up chopped cooked chicken with light cream cheese and Frank’s buffalo sauce. Bake in the oven at 400 for about 10-15 minutes and let it marinate. Sprinkle blue cheese crumbles on top. Good stuff…I think next time I will add green onions and veggies in the mix.
This morning I rolled outta bed and ran 4.5 miles at an easy 9 minute pace. Humid with temps in the 70s but the occasional breeze and cloud cover helped.
The cherry on top was seeing this beautiful hibiscus at the end. At least I can pretend I’m in Hawaii or the islands somewhere.
Going along with the tropical staycation theme I made myself a post run smoothie with roasted coconut sprinkled on top.
I’m glad I got this run in early because there’s a line of thunderstorms coming in today so I wanted to make sure I didn’t get rained out. That and the fact that I am scheduled to get a 60 minute massage tonight with my favorite therapist. Can’t wait.
Until then I will just be listening to this song on repeat…this one is staying on the playlist.
Any songs you’re listening to on repeat? What’s your favorite thing to put in a lettuce wrap?
I have to say, I’ve never had a lettuce wrap. 😦 But, those buffalo chicken wraps you mentioned sound DIVINE!!! I’m going to have to make me some of those.
Yeah let me know if you make them…I had a hard time not eating the mix before it went into the lettuce!!
Enjoy that massage! Have you heard the acoustic version of Clarity…enjoy that too!
Oh I haven’t heard that version yet I will check it out for sure! Thx Steve!!
My husband loves lettuce wraps, def trying this. Any lazy meals are my fav!!
He will love them…let me know if you make them! I might just make them again tonight 🙂
Those lettuce wraps look amazing! I think I’d eat almost anything if you put buffalo sauce on it, though. 🙂 I love hibiscuses, too. One of my favorite things about living in Florida was that there were hibiscus plants all over the place so I got to enjoy them a lot. Have a great day and enjoy your massage!
They are definitely beautiful! One of my favorite flowers so it put a little smile on my face at the end of my run!
Hope you are having an awesome day girlie!!
Mmm those lettuce wraps sound so simple and so awesome. Yum!
They’re delicious! Definitely a lot you can do with lettuce wraps!
the smoothie looks good! i gotta try adding coconut to my smoothies.
Yeah it added a nice kick to it!
I love chicken lettuce cups at the Chinese restaurant downstairs. OH it’s so good. 🙂
No songs on repeat, but when I do love one, it’s so on repeat. My first half marathon, September 2008, I ran the entire half listening to Pink’s “So What”. Finishing at a sub 2-hour, I felt like a rock star. LOL
Great, now that song will be in my head the rest of the afternoon. HA.
Chinese place downstairs! Look at you, lucky duck!!
yum lettuce wraps are so good! That totally makes me want to make some with crab or shrimp!
Yum I bet that would be very tasty!
Those wraps look amazing!! And what a pretty flower 🙂
They were tasty and filling! Plenty of leftovers for tonite 🙂 Hope you’re having a great day!!
OMG! I love the buffalo chicken wraps. Seriously that made me hungry! 🙂 I like anything that you can wrap with lettuce! That reminded me of that dish I would always get – Thai Chicken Wrap in Cheesecake Factory YUM!!! 🙂
Man haven’t been to CF in years! I bet they have a good wrap there!
I LOVE Buffalo chicken dip! Celery and carrots are a great addition! I cannot stop listening to Justin Timberlake – Mirrors! It’s so good!
Love Mirrors! It’s on my playlist this week!
