Quinoa Nachos and Weds Spin Playlist.

Here’s this week’s cycle playlist! I put together some throwbacks mixed with newer songs in my current rotation.
Check out this awesome mashup I found…I think it has close to 50 songs in it. This was too much fun to teach to during this morning’s class.

So last night I had a hankering for some Mexican. I had a big bag of quinoa that I hadn’t used and figured what better way to combine two of my favorite dishes…nachos and quinoa? So easy…this meal was done in about 15 minutes! This recipe makes plenty and you will definitely have a bunch of the quinoa mix to eat for lunch the next day.
Here’s what you need-
Cooked quinoa (however much you prefer, I used about 1 cup)
1 can of black beans (I used low sodium)
1 can of fiesta corn/corn & peppers
1/2 chopped avocado
Tortilla chips
Dash of garlic salt/red pepper to taste
Salsa/cheese to taste (I used shredded pepper jack)
Oh and find these tortilla chips if you can. They are seriously wonderful.
Mix cooked quinoa with cooked black beans and corn. Sprinkle garlic salt and mix til blended. Put on top of tortilla chips, melt cheese on top. Add avocado and sprinkle red pepper if desired. Salsa on top for the finishing touch.

  1. Yum! I really like those chips. I recently tried a tortilla chip that was the best ever, but I haven’t been able to locate them. They’re called Better Than Chips and come in a few different, equally delicious sounding, flavors. I’ve almost resorted to ordering them from Amazon because I haven’t found them in the store.

    I really like quinoa as a rice replacement in stir-frys. It’s way better than rice. I also just found some veggie quinoa burgers that I’m enjoying. I just can’t get enough of the texture.
