A Yummy Run and Pumpkin Pie Bars.

Yummy. I simply do not think there’s another word to describe this morning’s 7 mile run. It was yummy. Like chocolate cake on your birthday yummy. Simply delicious.

I love when it’s so chilly…you take a deep breath and then you can see it in the air. That’s when you know conditions are perfect for running.
Days like this just remind me just how much I love and need this outlet in my life.
I also love stretching and lying on the living room floor right after a run. Yes, I’m wearing the Chicago top again. Yes, I washed it before I wore it again. Promise.

Since this week it seems the only thing I’m making in the kitchen is pumpkin…I have another recipe for ya. Pumpkin pie bars…I promise you will love them.

Adapted from this recipe and of course I tweaked some of the items according to what I had in my cabinet.
What you’ll need:
-1 egg
-1 c. pumpkin puree
-1 tsp vanilla
-I banana, mashed
1/2 c. coconut flour
-1 tbsp peanut or almond butter
-2 tbsps agave
-1/2 tsp nutmeg
Mix ingredients and spread into a small square pan. Bake on 375 for 45-50 minutes. Cool, cut in squares/bars and serve!

    Beautiful Fall weather here, perfect for running. I was actually excited to get out for a quick little run last night with Michelle simply because I was able to wear tights and long sleeves again…love running tights.

    I’m not sure the last time I actually made a recipe step-by-step with all of the ingredients it called for. Probably years as I am always substituting this and that. Haha.

  4. Oh that recipe sounds divine. I am loving pumpkin everything. I love fall. I love your pace today on your cool crisp run. I am waiting patiently for my running speed to find its way back to me. Hmph.

    But I’m especially loving dunkin’ donuts iced pumpkin coffee and pumpkin munchkins. Guilty for having it four times last week. Hahaha

  5. Right now its the wet and windy version of autumn ( or Fall ) in Scotland but that has its own appeal for running. Pumpkin is a strange fruit for us.
