I Don’t Know What I Would Do and Cool Whip Cookies.

Last night I went to my local running group’s Christmas party. It was super fun to catch up with everyone! We have all been kind of all over the place so it was fun to get together and see everyone before the year is up. I enjoyed catching up with these two awesome runner girls.

This morning I was up at about 6:30 for a 5 mile sunrise run with my girl Elyse. I don’t know what I would do sometimes without the accountability of my neighborhood running buddies. I think otherwise I would have been a lazy bones and would definitely have slept in after last night’s Christmas party. We ran to the tune of this gorgeous sunrise.

So today I have a fun…EASY recipe to share for all of you that love to make Christmas goodies. I am probably the laziest baker out there. I made these for my mom this past weekend and she really loved them.
Red Velvet Cool Whip Cookies
What you’ll need-
1 box of red velvet cake mix
1 container of cool whip (I used the light version)
1 egg
Powdered sugar
1 c. flour (to help to shape the cookies)
Preheat oven to 350. Mix the cool whip into the cake mix (you could stop here and taste the batter before you put the egg in! It’s delicious) Beat the egg and mix it in until it’s all blended. The batter will be very gooey. Dip your hands in flour and form the batter into balls. Coat the balls in the powdered sugar and place on a cookie sheet sprayed with nonstick cooking spray. Bake in the oven for 10-15 minutes until they are really pretty…like this.

They are super chewy and delicious! Perfect for a cookie swap party. Enjoy!

  1. I LOVE your scarf in that picture! You look gorgeous! And cool whip cookies are a stroke of genius! I love to cook and bake. Some days I make food network worthy things, others I’m trying to find anything that’ll only take a few minutes to make!
