It was a 10k kind of Tuesday around these parts. Just enjoying the sunshine and breeze before it gets crazy hot out. It was a good run but I tell ya…I was sweating like a crazy woman when it was all said and done.
Um yeah…that forecast though. Sauna city. I see lots more early runs in my future.
Let’s chat today about some of my favorite recipes to cool off in the summer time! Lately I have been all about cold salads, lettuce wraps and smoothies. These are some of my go to things to beat the heat.
Runner’s pina colada
This one is sans alcohol…rum is optional, after your run of course. Coconut almond milk, frozen pineapples and banana. Pure heaven.
Shrimp lettuce wraps
Shrimp, avocado, quinoa, salsa. All wrapped up in some romaine. Freaking delicious.
Feta and chickpea salad
You can find the recipe here. So easy to whip up and you can seriously eat off of it for days.
Watermelon and feta salad with fresh basil and mint
Recipe here. Seriously can any combination be more delicious? I love the contrast between the cheese, mint and fruit. So good…I could devour a bowl in one sitting.

I could have used that piña colada after my run this morning! I too ran a 10k early to avoid this gosh darn Texas heat! We need a cold front. I have tried the chick peas in salad and am not too much of a fan. I think it’s a texture thing? Great job getting out there and beating the heat btw!

I miss being able to run more than 5-miles before work. I thought that once Lili was off for the summer I would take kids before work but what a production that would be… I think it was definitely easier when I had some motivation. LOL Great morning run and views. And girl, the heat. I mean, I am definitely not missing winter but this running in the heat is tough as nails. Keep cool with those yummy summer dranks.
