With a bit of a chill in the air this morning (when I say chill I mean like 70 degrees, we are in TX after all HA) I thought I would share a few of my favorite recipes for the fall season! These are sure to keep you full and satisfied post run and also great protein/carb ratio for maximum recovery! Or something like that. Hey, I do not pretend to be a nutritionist…but I sure do run a heck of a LOT! So let’s get down to business. Click the links for recipes!
–Turkey taco soup: This is one of my most favorite cozy meals and it is just so simple and easy. Plus you can make a huge batch and eat from it the entire week. So it is a win win. Excellent with a few slices of avocado and cheese. Yasss.
–Pumpkin smoothie: I love this one because it is totally nutrition packed and combines all of my favorite things! Plus y’all I tried some honey greek yogurt (thank you TRADER JOE’S) in my smoothie over the weekend. HEAVEN.
–Roasted kabocha squash: This stuff is just oh so good and I love that it has a sweetness to it. It’s super filling and I like to drizzle a little agave or honey over it. Maybe some cinnamon. Roast in the oven and serve. It’s kind of like a snack and a dessert all in one.
–Tex Mex Sweet Potatoes: I kinda sorta made this up on the fly a while back but sweet potatoes are just great to put just about anything in. Everything is good Mexican style, am I right or am I right?! And yes, paper plates are classy.
–Butternut squash mac n cheese: This is of course a lighter version of an all time favorite. I like to use the gluten free noodles as well (or quinoa noodles if you can find em. So freaking good. I am going to have to make some after my 50 miler this weekend.

Fall for me = stew recipes. I love making a West African peanut stew. Maybe I’ll fire up the crockpot next weekend and make a batch.

I’ve heard so many good things about West African peanut stew! I have to make it!!
I use this recipe (https://www.allrecipes.com/recipe/217952/west-african-peanut-stew/). It actually tastes better than my dad’s, who is Ghanaian, stew. For this recipe, I add a little cayenne pepper and more veggies. Although from different continents, I top quinoa with the stew for a nice hearty meal.

I love butternut squash soup! The savory version, not the sweetened one. I love minestrone too! Martha Stewart’s original recipe is delicious and filled with fresh veggies! Your recipes look delicious!

OMG these all look amazing. I was just thinking of how it’s getting to be the time I start making batches of chili again, but I definitely need to try some of these. Love the tex mex potato idea! And love cinnamon on EVERYTHING.
